Brief presentation and discussion of the metabolic central pathways leading to piruvate. The ethanol fermentation by yeast and bacteria, the lactate homofermentative, heterofermentative and bifidum pathways were presented. The butirate/acetate and butanol/acetone fermentation pathays were presented and discussed. A discussion on the linear and branched fermentative pathways was introduced, and branched pathways like the mixed acid fermentation by enterobacteria and the ethanol/acetate were presented. The acetate fermentation was presented. The methane fermentation was also presented as an example of pathway without the generation of ATP synthesis by phosporylation at the substrate level.
